Instructions
Preparation
Grate the Parmesan cheese, mince the garlic cloves, and dice the shallot. Chop the basil and sun-dried tomatoes.
Sautéing
In a large pot, heat the butter over medium-low heat. Add the minced garlic and diced shallot, and sauté for about 3 minutes until soft and fragrant.
Stir in the black pepper, chili flakes, dried thyme, and tomato paste. Cook for another 2 minutes.
Simmering
Add the tortellini to the pot with the vegetable broth and bring to a boil. Once boiling, reduce the heat and let it simmer for 3 minutes.
Cooking
Pour in the heavy cream and simmer for an additional 1 minute. Stir in the grated Parmesan cheese until melted.
Add the chopped sun-dried tomatoes and basil leaves, and stir to combine.
Serving
Serve hot, finished with freshly ground black pepper and extra chili flakes if desired.
Notes
Don’t overcook the tortellini to prevent it from becoming mushy. Fresh ingredients enhance the flavor. Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 2 months.
